As a result of the sheer number and wide range of varieties found in the Piave area, here some of the most innovative production techniques are applied at the same time as the most traditional methods. All work done in the vineyard is governed by a protocol which dictates the use of products in line with biodynamic and biological cultivation methods. In the winery specific winemaking

techniques are adopted including the carefully studied use of stainless steel and wood. The woods used may be French oak or locally sourced chestnut or oak. For the drying phase, followed by soft pressing, sophisticated humidity, temperature and air movement control systems are employed. The production processes used for wines made using the classic method are also particularly interesting.
